The other night I needed to use up some tofu in the fridge before it expired, and we had been out all afternoon. It was 8:00 by the time I could start dinner, so I ran over to Emigration Market to get some purple cabbage, broccoli, and rice. I can't even begin to tell you how wonderful it is to have Emigration Market so close. Dinner has been transformed into something more fresh dozens of times simply because I knew I could run over there! Anyhow, while I was cooking, the kids thought it would be a great idea to eat off of these trays we have that look quite a bit like school lunch trays. They completely entertained themselves creating the perfect school lunch scene while I spent about 25 minutes frantically cooking one of our more healthy meals. To them, the perfect school lunch happens to be perfectly healthy, and leaves one feeling perfectly satisfied in every way. It includes me as the perfect lunch lady, standing with the skillet and pot to serve each child delicious food. I've never seen Isaac so happy to eat stir fry in his life! More than anything, I was glad that we could be so spontaneous in such a short amount of time on our busiest school night. Perhaps it will happen again some day . . .

The Perfect School Lunch - At Home
First of all, Olivia came up with the title of this post and suggested that I add this story to "the computer".

I can't even begin to tell you how wonderful it is to have Emigration Market so close. It is so funny how such an ordinary thing can be extraordinary...thank goodness for those little moments and good call for Olivia wanting to remember this! Oh, and I love Emigration Market too, I am sad that I live so far away from it now!
